Our Ama koji is made only from rice koji and water. No additives or preservatives are used, and pasteurisation is avoided to preserve nutrients, vitamins and micro-organisms.
Ama Koji, often referred to as ‘sweet koji’ or ‘concentrated amazake’, is a natural, sugar-free fermented sweetener in paste form. It is made by fermenting rice koji with water.
It has a strong sweetness due to the saccharification of rice starch, but no sugar or sweeteners are used. It is nutrient-rich and has long been enjoyed in Japan for its ability to aid recovery from fatigue, improve gut health and strengthen immunity.
There are many ways to enjoy it: you can mix it with water or hot water, pour it over muesli or yoghurt. Use it as an alternative to sugar in your regular recipes.

Storage of Ama Koji
Consume as soon as possible, as they have not been heat sterilised in order to preserve flavour and nutrients. If you don’t finish it, transfer it to freezer-safe containers or bags and store it in the freezer. Once frozen, the product should be consumed within one month.
